This is another very simple and easy dish to prepare. Our friend Randy had first served this to us many years ago and when we left Austin to move onto the boat we had to bring this recipe with us. It’s another favorite to those we’ve served it to and excellent as leftovers.

1 chicken, cooked and diced
1 onion diced
1 small can mushrooms 
1 can diced tomatoes with the juice 
1 lb. Velveeta cheese diced
1 lb. Spaghetti cooked

1. In large pot add all the above and mix to help the cheese melt
2. Bake at 350 until bubbly

(note: Instead of spaghetti noodles, Randy prefers to use Bow Tie pasta.)
