This is a wonderful dish that can be prepared spicy or mild over rice. One of Damon’s favorite dishes. It is a very simple and easy recipe that is cooked in a pressure cooker.
3 ½ lbs chicken ( again I just use thighs) 1 can chicken broth 2 10 oz packages of frozen chopped spinach (rinsed off so that there is no coating of ice left on) 1 large can or jar of your favorite prepared spaghetti or pasta sauce 1-2 Tbs. Of curry powder salt to taste
1. Place broth and the chicken in the pressure cooker. 2. Place the frozen spinach on top of the chicken. 3. In a separate bowl mix the sauce and curry powder together. 4. Pour sauce over the spinach and chicken. (do not stir! If you do, the sauce will burn and stick to the bottom of the pan!) 5. Lock the lid in place and bring to pressure using high heat. Reduce the heat to maintain the high pressure and cook 12 minutes. 6. Quick release the pressure and stir. Season to taste. We serve this over white rice.
